- 2 cups of brown rice
- 1 tablespoon olive oil
- 1 cup chopped bell peppers
- 1 cup chopped zucchini
- 1 cup chopped carrots
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 cup low sodium vegetable broth
Instructions
- Rinse the brown rice under cold water.
- In a pot, heat olive oil over medium heat.
- Add bell peppers, zucchini, and carrots. Sauté for 5 minutes.
- Add garlic powder and black pepper, stir well.
- Add rinsed rice and vegetable broth.
- Bring to a boil, then reduce heat and cover.
- Simmer for 40 minutes until rice is tender.
- Fluff with a fork and serve warm.
