Ingredients
- Chicken breast – 500g
- Broccoli – 200g
- Bell peppers – 150g
- Olive oil – 2 tablespoons
- Garlic – 2 cloves
- Salt – to taste
- Pepper – to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Chop the chicken breast into bite-sized pieces.
- Cut broccoli and bell peppers into manageable pieces.
- In a bowl, mix olive oil, minced garlic, salt, and pepper.
- Add chicken and vegetables to the bowl and coat well.
- Spread the mixture on a baking sheet.
- Bake for 20-25 minutes until chicken is cooked through.
- Let it cool, then portion into meal prep containers.
Notes
- Store in the fridge for up to 4 days.
- Reheat in the microwave before serving.
