A quick and easy low-calorie ground beef stir-fry packed with fresh vegetables and flavor.
Ingredients

- 1 pound lean ground beef (90% lean)
- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce (low sodium)
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 1 tablespoon green onions, chopped (for garnish)
Instructions
- In a large skillet or wok, heat sesame oil over medium-high heat.
- Add ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Add garlic and ginger, and cook for an additional 1-2 minutes until fragrant.
- Stir in bell peppers, broccoli, and snap peas. Cook for another 5-7 minutes until the vegetables are tender-crisp.
- Add soy sauce, and season with salt and pepper to taste. Stir well to combine.
- Remove from heat and garnish with chopped green onions before serving.
Notes
- For a spicier kick, add red pepper flakes or sriracha.
- Serve over brown rice or quinoa for a complete meal.
- This dish can be made ahead and stored in the fridge for up to 3 days.
