- 2 large russet potatoes
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb crab meat
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 2 tbsp butter
- 2 cloves garlic, minced
- 1/4 cup chopped green onions
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Scrub potatoes, pierce with a fork, and bake for 45-50 minutes until tender.
- In a pan, melt butter and sauté garlic until fragrant.
- Add shrimp and cook until pink, about 2-3 minutes per side.
- Stir in crab meat and season with salt and pepper. Remove from heat.
- Cut open baked potatoes and fluff the insides with a fork.
- Fill each potato with seafood mixture, top with cheese, and return to the oven for 5 minutes to melt.
- Garnish with sour cream and green onions before serving.
Notes
- Use fresh seafood for the best flavor.
- Substitute with lobster or scallops if preferred.
