Ingredients

  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese, plus more for topping
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, combine the diced potatoes, chopped onion, minced garlic, and broth. Bring to a boil over medium-high heat.
  2. Reduce the heat to medium-low and simmer until the potatoes are tender, about 15-20 minutes.
  3. Using a potato masher or immersion blender, mash the potatoes until you reach your desired consistency.
  4. Stir in the heavy cream, cheddar cheese, and crumbled bacon. Mix until the cheese is melted and everything is well combined.
  5. Season with salt and pepper to taste.
