- 6 medium russet potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese, plus more for topping
- 1/2 cup cooked bacon, crumbled
- 1/4 cup sour cream
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, combine the diced potatoes, chopped onion, minced garlic, and broth. Bring to a boil over medium-high heat.
- Reduce the heat to medium-low and simmer until the potatoes are tender, about 15-20 minutes.
- Using a potato masher or immersion blender, mash the potatoes until you reach your desired consistency.
- Stir in the heavy cream, cheddar cheese, and crumbled bacon. Mix until the cheese is melted and everything is well combined.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and top with additional cheese, sour cream, and chopped green onions.
