- 2 pounds baby potatoes, halved
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/2 cup green onions, chopped
- Salt and pepper to taste
Instructions
- In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until tender, about 15-20 minutes. Drain and let cool.
- In a large bowl, combine sour cream, mayonnaise, salt, and pepper. Mix until smooth.
- Once the potatoes are cooled, cut them into bite-sized pieces and add them to the bowl with the dressing.
- Gently fold in the cheddar cheese, crumbled bacon, and green onions until all ingredients are well combined.
- Cover and refrigerate for at least 1 hour to allow flavors to meld.
- Serve chilled, garnished with extra green onions and bacon if desired.
