  • Author: ushinzomr

Description

This loaded potato salad is a creamy, delicious side dish packed with all your favorite toppings, making it the perfect addition to any barbecue or picnic.

Ingredients

Scale
  • 2 pounds baby potatoes, halved
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until tender, about 15-20 minutes. Drain and let cool.
  2. In a large bowl, combine sour cream, mayonnaise, salt, and pepper. Mix until smooth.
  3. Once the potatoes are cooled, cut them into bite-sized pieces and add them to the bowl with the dressing.
  4. Gently fold in the cheddar cheese, crumbled bacon, and green onions until all ingredients are well combined.
  5. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  6. Serve chilled, garnished with extra green onions and bacon if desired.

Notes

  • Feel free to customize your potato salad by adding other ingredients such as diced pickles, hard-boiled eggs, or different cheeses.
  • For a healthier version, substitute Greek yogurt for sour cream.
