Ingredients

  • 1/4 cup milk

  • 1/2 cup cooked breakfast sausage, crumbled
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup salsa
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
  2. In a non-stick skillet over medium heat, add diced onions and bell peppers. Sauté until softened, about 3-4 minutes.
  3. Add the crumbled breakfast sausage to the skillet and cook until heated through.
  4. Pour the egg mixture into the skillet and gently stir. Cook until the eggs are scrambled and just set, about 5-7 minutes.
  5. Add the shredded cheese and salsa to the skillet, stirring until the cheese is melted.
  6. Warm the flour tortillas in a separate skillet or microwave for a few seconds to make them pliable.
  7. Spoon the egg mixture onto each tortilla, then fold in the sides and roll it up tightly into a burrito.
  8. Serve warm, garnished with fresh cilantro if desired.

Notes

  • Feel free to customize your burrito with additional ingredients like avocado, black beans, or jalapeños.
