- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked breakfast sausage, crumbled
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup salsa
- 4 large flour tortillas
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
- In a non-stick skillet over medium heat, add diced onions and bell peppers. Sauté until softened, about 3-4 minutes.
- Add the crumbled breakfast sausage to the skillet and cook until heated through.
- Pour the egg mixture into the skillet and gently stir. Cook until the eggs are scrambled and just set, about 5-7 minutes.
- Add the shredded cheese and salsa to the skillet, stirring until the cheese is melted.
- Warm the flour tortillas in a separate skillet or microwave for a few seconds to make them pliable.
- Spoon the egg mixture onto each tortilla, then fold in the sides and roll it up tightly into a burrito.
- Serve warm, garnished with fresh cilantro if desired.
Notes
- Feel free to customize your burrito with additional ingredients like avocado, black beans, or jalapeños.
- For a vegetarian version, omit the sausage and add more veggies.
