Ingredients

  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Butter (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the russet potatoes thoroughly and prick them several times with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skins are crispy and a fork easily pierces the flesh.
  5. Remove the potatoes from the oven and let them cool for a few minutes.
  6. Slice the potatoes open and fluff the insides with a fork.
  7. Top each potato with sour cream, cheddar cheese, bacon, green onions, salt, and pepper.
  8. Add a pat of butter on top if desired.
