Ingredients

- 2 cups mixed greens (spinach, arugula, or lettuce)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 cup cooked quinoa or couscous
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh herbs (basil, parsley, or mint), chopped
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, quinoa or couscous, feta cheese, olives, red onion, and fresh herbs.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving for a refreshing meal.
Notes
- Feel free to add grilled chicken or shrimp for extra protein.
- You can swap out vegetables based on your preferences or what’s in season.
