Ingredients

  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh herbs (basil, parsley, or mint), chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, quinoa or couscous, feta cheese, olives, red onion, and fresh herbs.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving for a refreshing meal.
