Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 egg yolks
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
  3. Add the egg yolks and mix until the dough comes together. Press the dough into a tart pan evenly across the bottom and up the sides.
  4. Prick the bottom of the crust with a fork and bake for 15-20 minutes or until golden brown. Remove from oven and let cool.
  5. In another bowl, whisk together the lemon juice, lemon zest, heavy cream, powdered sugar, and vanilla extract until smooth.
  6. Pour the lemon filling into the cooled tart crust and bake for an additional 20-25 minutes until the filling is set.
  7. Let the tart cool completely before slicing. Serve chilled or at room temperature.

Notes

  • For a sweeter tart, you can increase the amount of sugar in the filling.
  • Garnish with whipped cream or fresh berries for an extra touch.
