A deliciously tangy and sweet lemon tart with a buttery crust and smooth lemon filling.

- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 3 egg yolks
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the flour, sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
- Add the egg yolks and mix until the dough comes together. Press the dough into a tart pan evenly across the bottom and up the sides.
- Prick the bottom of the crust with a fork and bake for 15-20 minutes or until golden brown. Remove from oven and let cool.
- In another bowl, whisk together the lemon juice, lemon zest, heavy cream, powdered sugar, and vanilla extract until smooth.
- Pour the lemon filling into the cooled tart crust and bake for an additional 20-25 minutes until the filling is set.
- Let the tart cool completely before slicing. Serve chilled or at room temperature.
Notes
- For a sweeter tart, you can increase the amount of sugar in the filling.
- Garnish with whipped cream or fresh berries for an extra touch.
