Ingredients

  • 12 oz pasta (spaghetti or your choice)
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. In a large bowl, combine ricotta cheese, lemon zest, and lemon juice. Mix well until creamy.
  5. Add the cooked pasta to the bowl with the ricotta mixture. Toss to combine, adding reserved pasta water a little at a time until desired creaminess is reached.
  6. Stir in the sautéed spinach and season with salt and pepper to taste.
  7. Serve immediately, topped with grated Parmesan cheese and fresh basil if desired.

Notes

  • For a lighter version, you can use low-fat ricotta cheese.
  • Feel free to add grilled chicken or shrimp for added protein.
  • This dish can be made ahead of time and reheated, but the pasta may absorb more sauce.
