A creamy and refreshing pasta dish featuring ricotta cheese, fresh spinach, and garlic, all tossed in a zesty lemon sauce.

- 12 oz pasta (spaghetti or your choice)
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 2 tbsp olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a large bowl, combine ricotta cheese, lemon zest, and lemon juice. Mix well until creamy.
- Add the cooked pasta to the bowl with the ricotta mixture. Toss to combine, adding reserved pasta water a little at a time until desired creaminess is reached.
- Stir in the sautéed spinach and season with salt and pepper to taste.
- Serve immediately, topped with grated Parmesan cheese and fresh basil if desired.
Notes
- For a lighter version, you can use low-fat ricotta cheese.
- Feel free to add grilled chicken or shrimp for added protein.
- This dish can be made ahead of time and reheated, but the pasta may absorb more sauce.
