- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 tbsp lemon zest
- 1 tbsp cracked black pepper
- 1 tsp salt
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp onion powder
- Juice of 1 lemon
Instructions
- Preheat oven to 400°F.
- Pat chicken thighs dry with paper towels.
- Mix olive oil, lemon zest, black pepper, salt, garlic, paprika, and onion powder in a bowl.
- Coat chicken thighs evenly with the mixture.
- Place chicken thighs skin-side up on a baking sheet.
- Squeeze lemon juice over the chicken.
- Bake for 35-40 minutes or until internal temperature reaches 165°F.
- Let rest for 5 minutes before serving.
Notes
- For crispier skin, broil for the last 2-3 minutes.
- Adjust pepper quantity based on preference.
- Serve with roasted vegetables or rice.
