- 1 whole chicken (about 4 lbs)
- 1 lemon, halved
- 4 garlic cloves, crushed
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
Instructions
- Preheat oven to 375°F (190°C).
- Rinse the chicken and pat dry with paper towels.
- Rub the chicken with olive oil, salt, pepper, thyme, rosemary, and oregano.
- Stuff the cavity with lemon halves and garlic cloves.
- Place the chicken in a roasting pan breast-side up.
- Roast for 1 hour 30 minutes or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving.
