Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large potatoes, cut into fries
  • 2 tbsp melted butter
  • 2 cloves garlic, minced
  • 1 tbsp chopped parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper.
  3. Coat the chicken breasts with the marinade and let sit for 10 minutes.
  4. Place the chicken on a baking sheet and bake for 20-25 minutes, or until fully cooked.
  5. While the chicken cooks, toss the potato fries with melted butter, garlic, and parsley.
  6. Spread the fries on another baking sheet and bake for 20 minutes, flipping halfway.
  7. Serve the chicken with the garlic butter fries.
