- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large potatoes, cut into fries
- 2 tbsp melted butter
- 2 cloves garlic, minced
- 1 tbsp chopped parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper.
- Coat the chicken breasts with the marinade and let sit for 10 minutes.
- Place the chicken on a baking sheet and bake for 20-25 minutes, or until fully cooked.
- While the chicken cooks, toss the potato fries with melted butter, garlic, and parsley.
- Spread the fries on another baking sheet and bake for 20 minutes, flipping halfway.
- Serve the chicken with the garlic butter fries.
