- 4 boneless, skinless chicken breasts
- 2 large potatoes, cut into wedges
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Toss potato wedges with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet.
- Bake potatoes for 20 minutes, flipping halfway.
- Mix lemon juice, zest, garlic, oregano, thyme, and remaining olive oil in a bowl.
- Coat chicken breasts with the lemon herb mixture.
- Place chicken on the baking sheet with potatoes.
- Bake for another 20-25 minutes until chicken reaches 165°F (74°C).
- Sprinkle with fresh parsley before serving.
Notes
- For crispier wedges, soak potatoes in cold water for 10 minutes before baking.
- Adjust seasoning to taste.
- Serve with a side salad for a complete meal.
