Description

A simple and flavorful dish featuring lemon dill salmon served with crispy potato bites.


Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • 1 lemon, sliced
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with 1 tbsp olive oil, garlic powder, salt, and pepper. Spread on a baking sheet.
  3. Roast potatoes for 20 minutes, flipping halfway.
  4. Place salmon on a separate baking sheet. Drizzle with remaining olive oil and top with dill and lemon slices.
  5. Bake salmon for 12-15 minutes until flaky.
  6. Serve salmon with potato bites.
