A simple and flavorful dish featuring lemon dill salmon served with crispy potato bites.
Ingredients

- 2 salmon fillets (6 oz each)
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tbsp fresh dill, chopped
- 1 lemon, sliced
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with 1 tbsp olive oil, garlic powder, salt, and pepper. Spread on a baking sheet.
- Roast potatoes for 20 minutes, flipping halfway.
- Place salmon on a separate baking sheet. Drizzle with remaining olive oil and top with dill and lemon slices.
- Bake salmon for 12-15 minutes until flaky.
- Serve salmon with potato bites.

- Use fresh dill for the best flavor.
- Check salmon for doneness by flaking with a fork.
- Add extra lemon slices for garnish if desired.
