- 2 boneless, skinless chicken breasts, sliced
- 1 cup orzo pasta
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 carrot, julienned
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Cook orzo according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add chicken and cook until browned, about 5 minutes.
- Add garlic, bell pepper, zucchini, and carrot. Stir fry for 4-5 minutes until vegetables soften.
- Stir in cooked orzo, lemon juice, zest, oregano, salt, and pepper. Cook for 2 more minutes.
- Garnish with fresh parsley and serve hot.

- Add red pepper flakes for extra heat.
