Description

Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 cup orzo pasta
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 lemon, juiced and zested
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook orzo according to package instructions. Drain and set aside.

  3. Add garlic, bell pepper, zucchini, and carrot. Stir fry for 4-5 minutes until vegetables soften.
  4. Stir in cooked orzo, lemon juice, zest, oregano, salt, and pepper. Cook for 2 more minutes.
  5. Garnish with fresh parsley and serve hot.
