Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper.
  3. Add the chicken to the skillet and cook for 6-7 minutes on each side, or until cooked through. Remove chicken from the skillet and let it rest.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Add lemon zest, lemon juice, and chicken broth to the skillet. Bring to a simmer and cook for 2-3 minutes.
  6. Stir in the heavy cream and season with salt and pepper. Allow the sauce to thicken slightly.
  7. Slice the chicken and return it to the skillet. Add the cooked pasta and toss to combine.
  8. Sprinkle with Parmesan cheese and garnish with fresh parsley before serving.
