- 8 oz pasta (spaghetti or fettuccine)
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper.
- Add the chicken to the skillet and cook for 6-7 minutes on each side, or until cooked through. Remove chicken from the skillet and let it rest.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Add lemon zest, lemon juice, and chicken broth to the skillet. Bring to a simmer and cook for 2-3 minutes.
- Stir in the heavy cream and season with salt and pepper. Allow the sauce to thicken slightly.
- Slice the chicken and return it to the skillet. Add the cooked pasta and toss to combine.
- Sprinkle with Parmesan cheese and garnish with fresh parsley before serving.
