- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp melted butter
- 16 oz cream cheese (softened)
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the pan.
- Bake crust for 10 minutes, then let it cool slightly.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, mixing well.
- Stir in lemon juice, lemon zest, and vanilla extract.
- Pour filling over the crust and smooth the top.
- Bake for 25-30 minutes until set. Cool completely before chilling for at least 2 hours.
- Cut into squares and serve.
Notes
- Use room-temperature cream cheese for smoother filling.
- Chill before serving for best texture.
- Store leftovers in the refrigerator for up to 5 days.
