Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a mixing bowl, beat together the softened butter and granulated sugar until light and fluffy.
- Add the flour and salt, and mix until combined.
- Press the dough into the bottom of the prepared baking dish, creating an even layer.
- Bake the crust for 15-20 minutes, or until lightly golden.
- In another bowl, whisk together the eggs, granulated sugar, lemon juice, and lemon zest until smooth.
- Pour the lemon mixture over the baked crust and return to the oven.
- Bake for an additional 20-25 minutes, or until the filling is set and slightly firm to the touch.
- Allow the bars to cool completely in the pan on a wire rack.
- Once cooled, dust with powdered sugar and cut into squares.
Notes
- For extra lemon flavor, add more lemon zest.
- These lemon bars can be stored in the refrigerator for up to a week.
