Ingredients

  • 1 cup (120g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup (200g) granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup (120ml) fresh lemon juice
  • Zest of 1 lemon
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine 1 cup of flour, 1/4 cup of granulated sugar, softened butter, and salt. Mix until the dough is crumbly.
  3. Press the dough firmly into the bottom of the prepared baking dish to form an even layer.
  4. Bake the crust for 15-20 minutes, or until lightly golden.
  5. In another bowl, whisk together the eggs, 1 cup of granulated sugar, 2 tablespoons of flour, baking powder, lemon juice, and lemon zest until smooth.
  6. Pour the lemon filling over the baked crust and return to the oven.
  7. Bake for an additional 20-25 minutes, or until the filling is set and slightly golden.
  8. Allow the lemon bars to cool completely in the pan before lifting them out and cutting into squares.
  9. Dust with powdered sugar before serving.

Notes

  • For a more intense lemon flavor, add extra lemon zest.
  • Store lemon bars in the refrigerator for up to a week.
  • These lemon bars freeze well for up to 3 months.
