These classic lemon bars have a buttery shortbread crust and a tangy lemon filling, making them the perfect balance of sweet and tart.

- 1 cup (120g) all-purpose flour
- 1/2 cup (60g) powdered sugar
- 1/4 teaspoon salt
- 1/2 cup (113g) unsalted butter, softened
- 2 large eggs
- 1 cup (200g) granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 cup (60ml) fresh lemon juice
- Zest of 1 lemon
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish or line it with parchment paper.
- In a medium bowl, whisk together 1 cup flour, 1/2 cup powdered sugar, and 1/4 teaspoon salt.
- Add the softened butter and mix until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
- Bake the crust in the preheated oven for 15 minutes or until lightly golden.
- In another bowl, whisk together the eggs, granulated sugar, 2 tablespoons flour, baking powder, lemon juice, and lemon zest until smooth.
- Pour the lemon filling over the hot crust and return to the oven.
- Bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly browned.
- Remove from the oven and allow to cool completely in the baking dish on a wire rack.
- Once cooled, dust with powdered sugar and cut into squares.
Notes
- For an extra lemony flavor, increase the lemon zest.
- Store lemon bars in an airtight container in the refrigerator for up to 5 days.
