These classic lemon bars have a buttery shortbread crust and a tangy lemon filling, making them the perfect balance of sweet and tart.


Ingredients

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (60g) powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 2 large eggs
  • 1 cup (200g) granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup (60ml) fresh lemon juice
  • Zest of 1 lemon
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish or line it with parchment paper.
  2. In a medium bowl, whisk together 1 cup flour, 1/2 cup powdered sugar, and 1/4 teaspoon salt.
  3. Add the softened butter and mix until the mixture resembles coarse crumbs.
  4. Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
  5. Bake the crust in the preheated oven for 15 minutes or until lightly golden.
  6. In another bowl, whisk together the eggs, granulated sugar, 2 tablespoons flour, baking powder, lemon juice, and lemon zest until smooth.
  7. Pour the lemon filling over the hot crust and return to the oven.
  8. Bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly browned.
  9. Remove from the oven and allow to cool completely in the baking dish on a wire rack.
  10. Once cooled, dust with powdered sugar and cut into squares.

Notes

  • For an extra lemony flavor, increase the lemon zest.
  • Store lemon bars in an airtight container in the refrigerator for up to 5 days.
