- 1 cup (125g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1/2 cup (113g) unsalted butter, softened
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup (200g) granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup (120ml) fresh lemon juice
- Zest of 1 lemon
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.
- In a mixing bowl, combine 1 cup of flour, 1/4 cup of granulated sugar, softened butter, and salt. Mix until crumbly and press into the bottom of the prepared baking dish.
- Bake the crust for 15-20 minutes, or until lightly golden.
- In another bowl, whisk together the eggs, 1 cup of granulated sugar, 2 tablespoons of flour, baking powder, lemon juice, and lemon zest until smooth.
- Pour the lemon mixture over the pre-baked crust and return to the oven.
- Bake for an additional 20-25 minutes, or until the filling is set and slightly golden.
- Allow to cool completely before dusting with powdered sugar and cutting into squares.
Notes
- For a stronger lemon flavor, increase the amount of lemon zest.
- These lemon bars can be stored in the refrigerator for up to 5 days.
- Serve chilled or at room temperature.
