Ingredients

  • 1 cup fresh lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 4 cups water
  • 2 tablespoons dried culinary lavender
  • 1/4 cup fresh mint leaves, plus more for garnish
  • Ice cubes
  • Lemon slices for garnish

Instructions

  1. In a medium saucepan, combine 1 cup of water and the sugar over medium heat. Stir until the sugar is dissolved completely.
  2. Add the dried lavender and fresh mint leaves to the saucepan. Remove from heat and let it steep for about 15-20 minutes.
  3. Strain the lavender-mint syrup through a fine mesh sieve into a large pitcher to remove the solids.
  4. Add the fresh lemon juice and the remaining 3 cups of cold water to the pitcher. Stir well to combine.
  5. Taste and adjust sweetness if necessary by adding more sugar or water.
  6. Serve over ice cubes and garnish with fresh mint leaves and lemon slices.

Notes

  • For a stronger lavender flavor, let the syrup steep longer.
  • You can also serve this drink sparkling by replacing some of the water with club soda.
