- 1 pound ground beef
- 1 pound Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups chicken or beef broth
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground beef and Italian sausage over medium heat until fully cooked. Drain excess fat.
- Add chopped onion and minced garlic to the pot, cooking until the onion is translucent.
- Stir in crushed tomatoes, broth, dried basil, oregano, red pepper flakes (if using), and season with salt and pepper. Bring to a simmer.
- Add broken lasagna noodles to the pot and cook until al dente, about 10-12 minutes.
- In a bowl, mix ricotta cheese with a pinch of salt and pepper. Set aside.
- Once the noodles are cooked, stir in the mozzarella cheese until melted.
- Serve the soup in bowls and top each with a dollop of ricotta cheese, a sprinkle of Parmesan cheese, and fresh basil.
Notes
- For a vegetarian version, substitute the meat with mushrooms and use vegetable broth.
- Feel free to add vegetables like spinach or zucchini for extra nutrition.
- This soup is best served immediately, but leftovers can be stored in the fridge for up to 3 days.
