  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups chicken or beef broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, brown the ground beef and Italian sausage over medium heat until fully cooked. Drain excess fat.
  2. Add chopped onion and minced garlic to the pot, cooking until the onion is translucent.
  3. Stir in crushed tomatoes, broth, dried basil, oregano, red pepper flakes (if using), and season with salt and pepper. Bring to a simmer.
  4. Add broken lasagna noodles to the pot and cook until al dente, about 10-12 minutes.
  5. In a bowl, mix ricotta cheese with a pinch of salt and pepper. Set aside.
  6. Once the noodles are cooked, stir in the mozzarella cheese until melted.
  7. Serve the soup in bowls and top each with a dollop of ricotta cheese, a sprinkle of Parmesan cheese, and fresh basil.

  • For a vegetarian version, substitute the meat with mushrooms and use vegetable broth.
