- 1 pound lamb shoulder, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin

- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- Skewers (soaked in water if wooden)
Instructions
- In a large bowl, combine olive oil, lemon juice, garlic, cumin, coriander, smoked paprika, salt, black pepper, and cayenne pepper.
- Add lamb cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, or up to overnight for best flavor.
- Preheat your grill to medium-high heat.
- Thread the marinated lamb onto the skewers, leaving a little space between each piece.
- Place skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
- Remove from grill and let rest for a few minutes before serving.
