  • 1 lobster tail (about 200g), cooked and shelled
  • 2 large potatoes, peeled and diced
  • 1/4 cup heavy cream
  • 2 tbsp butter
  • 8 asparagus spears, trimmed
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 clove garlic, minced
  • 1 tsp fresh thyme

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Season the lamb chops with salt, pepper, and thyme.
  3. Heat olive oil in a pan over medium-high heat and sear the lamb chops for 2 minutes per side.
  4. Transfer the lamb chops to the oven and roast for 5-7 minutes for medium-rare.
  5. Boil the potatoes until tender, then mash with butter, cream, and minced garlic.
  6. Flake the cooked lobster meat and gently fold it into the mashed potatoes.
  7. Blanch the asparagus in boiling water for 2 minutes, then drain and sauté briefly in butter.
  8. Plate the lobster mash, top with lamb chops, and serve with asparagus.
