Ingredients

  • 4 large russet potatoes
  • Vegetable oil for frying
  • Salt to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh herbs (optional)

Instructions

  1. Peel the potatoes and cut them into thin strips.
  2. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
  3. Drain and pat the potatoes dry with a clean towel.
  4. In a large pot, heat vegetable oil to 350°F (175°C).
  5. Fry the potatoes in batches for about 5-7 minutes or until golden brown and crispy.
  6. Remove the fries from the oil and drain on paper towels. Season with salt immediately.
  7. In a small bowl, combine mayonnaise, ketchup, Dijon mustard, lemon juice, garlic powder, paprika, black pepper, and herbs (if using) to make the dip.
  8. Serve the crispy fries hot with the dip on the side.

Notes

  • For extra crispy fries, fry them twice: first at a lower temperature (325°F) until tender, and then at 350°F for the final crisping.
  • Feel free to experiment with different seasonings in the dip to suit your taste.
