- 4 large russet potatoes
- Vegetable oil for frying
- Salt to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh herbs (optional)
Instructions
- Peel the potatoes and cut them into thin strips.
- Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
- Drain and pat the potatoes dry with a clean towel.
- In a large pot, heat vegetable oil to 350°F (175°C).
- Fry the potatoes in batches for about 5-7 minutes or until golden brown and crispy.
- Remove the fries from the oil and drain on paper towels. Season with salt immediately.
- In a small bowl, combine mayonnaise, ketchup, Dijon mustard, lemon juice, garlic powder, paprika, black pepper, and herbs (if using) to make the dip.
- Serve the crispy fries hot with the dip on the side.
Notes
- For extra crispy fries, fry them twice: first at a lower temperature (325°F) until tender, and then at 350°F for the final crisping.
- Feel free to experiment with different seasonings in the dip to suit your taste.
