Ingredients

  • 1 lb chicken breast, shredded
  • 1 can diced tomatoes (14 oz)
  • 1 can green chilies (4 oz)
  • 4 cups chicken broth
  • 1 cup bell peppers, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1/2 cup sour cream (optional)

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add chicken breast and cook until no longer pink.
  3. Stir in diced tomatoes, green chilies, bell peppers, and chicken broth.
  4. Add chili powder, cumin, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Shred the chicken in the pot and mix well.
  7. Serve hot, topped with cheese and sour cream if desired.
