A delicious and hearty keto chicken taco soup that is low in carbs and full of flavor.
Ingredients

- 1 lb chicken breast, shredded
- 1 can diced tomatoes (14 oz)
- 1 can green chilies (4 oz)
- 4 cups chicken broth
- 1 cup bell peppers, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 1/2 cup sour cream (optional)
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add chicken breast and cook until no longer pink.
- Stir in diced tomatoes, green chilies, bell peppers, and chicken broth.
- Add chili powder, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Shred the chicken in the pot and mix well.
- Serve hot, topped with cheese and sour cream if desired.
Notes
- Can add avocado for extra creaminess.
- Store leftovers in the fridge for up to 3 days.
