Description
A hearty and nutritious soup made with kale, potatoes, and sausage.
Ingredients
Scale
- 1 lb sausage
- 4 cups kale, chopped
- 2 large potatoes, diced
- 1 onion, chopped
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, brown the sausage over medium heat.
- Add onion and garlic, cooking until softened.
- Stir in the potatoes and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add kale and cook for another 5 minutes.
- Stir in heavy cream and season with salt and pepper.
- Serve hot.
Notes
- Use your choice of sausage for different flavors.
- Adjust the thickness by adding more or less broth.
- Store leftovers in the fridge for up to 3 days.
