- 1 whole chicken (3–4 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried thyme
- 1 lemon, halved
- 4 garlic cloves, smashed
- 1 small onion, quartered
- 2 sprigs fresh rosemary
Instructions
- Preheat oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- Rub olive oil all over the chicken.
- Mix salt, pepper, garlic powder, paprika, and thyme, then season the chicken inside and out.
- Stuff the cavity with lemon, garlic, onion, and rosemary.
- Place the chicken breast-side up in a roasting pan or cast-iron skillet.
- Roast for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10 minutes before carving.
