Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix cream cheese, cheddar cheese, spinach, garlic, salt, and pepper.
- Cut a pocket into each chicken breast, being careful not to cut through completely.
- Stuff each chicken with the cheese mixture.
- Heat olive oil in an oven-safe skillet over medium heat.
- Sear the chicken for 2-3 minutes per side until lightly browned.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is fully cooked.
- Let rest for 5 minutes before serving.

- Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
- Substitute spinach with sun-dried tomatoes for a different flavor.
