- 1 cup cooked rice
- 1 cup black beans (drained)
- 1 cup shredded cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 tbsp taco seasoning
- 4 large flour tortillas
- 1/2 cup salsa
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onions and bell peppers, cook until soft.
- Add ground beef and cook until browned.
- Stir in taco seasoning, rice, and black beans.
- Warm tortillas slightly.
- Spoon filling onto tortillas, top with cheese and salsa.
- Fold sides inward and roll tightly.
- Serve warm.
