Description

A simple one-pan dinner featuring juicy roast chicken with crispy potatoes, infused with lemon and garlic flavors.


Ingredients

  • 1 whole chicken (about 34 lbs)
  • 1.5 lbs potatoes, quartered
  • 4 garlic cloves, minced
  • 1 lemon, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the chicken dry and season inside and out with salt, pepper, thyme, and rosemary.
  3. Stuff the cavity with lemon slices and half the minced garlic.
  4. Toss potatoes with olive oil, remaining garlic, and a pinch of salt.
  5. Arrange potatoes in a roasting pan and place the chicken on top.
  6. Roast for 1 hour 15 minutes or until chicken reaches 165°F (74°C).
  7. Let rest for 10 minutes before carving.

  • Use a meat thermometer for perfect doneness.
  • For crispier skin, broil for 2-3 minutes at the end.
