Description

A flavorful dish featuring jerk-marinated steak and shrimp served over tropical pilaf rice. Perfect for a hearty meal with a Caribbean twist.


Ingredients

  • 1 lb flank steak, sliced thin
  • 1 lb shrimp, peeled and deveined
  • 2 cups jasmine rice
  • 1 cup coconut milk
  • 1 1/2 cups water
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small pineapple, diced
  • 2 tbsp jerk seasoning
  • 2 tbsp olive oil
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Marinate the steak and shrimp with jerk seasoning and lime juice for 30 minutes.
  2. Cook rice with coconut milk and water until fluffy. Set aside.
  3. Sauté bell peppers and pineapple in olive oil for 3 minutes.
  4. Grill or pan-sear the steak and shrimp until fully cooked.
  5. Mix the sautéed vegetables into the rice.
  6. Serve steak and shrimp over the tropical pilaf rice.
  7. Garnish with fresh cilantro.

Notes

  • Adjust jerk seasoning to taste for more or less spice.
  • Use fresh pineapple for better flavor.
  • Cook rice ahead to save time.
