Description
Spicy jambalaya meatballs with peppers combine Creole flavors in a hearty dish. Serve with rice for a complete meal.

- 1 lb ground beef
- 1 lb ground pork
- 1 cup cooked rice
- 1 egg
- 1 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 bell pepper, diced
- 1 onion, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 2 cups chicken broth
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Mix ground beef, pork, rice, egg, Cajun seasoning, garlic powder, and onion powder in a bowl.
- Form into 1-inch meatballs and place on a baking sheet.
- Bake for 20 minutes or until browned.
- Heat olive oil in a large skillet over medium heat.
- Sauté bell pepper, onion, celery, and garlic until soft.
- Add diced tomatoes and chicken broth. Simmer for 10 minutes.
- Add meatballs to the skillet. Simmer for another 15 minutes.
- Season with salt and pepper.
- Serve hot with rice.
Notes
- For extra heat, add hot sauce or cayenne pepper.
- Use turkey or chicken for a lighter version.
- Leftovers can be refrigerated for up to 3 days.
