Instructions
- Preheat the oven to 375°F (190°C).
- Choose medium-sized bell peppers and cut the tops off to create a jack-o-lantern shape.
- Sauté the quinoa, black beans, corn, cumin, paprika, salt, and pepper in a pan until heated through.
- Stuff the mixture into the carved bell peppers.
- Top each stuffed pepper with shredded cheese.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 5 minutes to melt the cheese.
- Garnish with fresh parsley before serving.
