This Italian sausage potato soup is hearty and full of flavor.

- 1 pound Italian sausage
- 4 cups diced potatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add the onion and garlic; sauté until onions are translucent.
- Add diced potatoes and chicken broth; bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in heavy cream and Italian seasoning; season with salt and pepper.
- Simmer for an additional 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- Adjust seasoning to your taste.
- For a thicker soup, mash some of the potatoes.
- This soup can be stored in the refrigerator for up to 3 days.
