Description
A hearty Irish stew served with creamy mashed potatoes.
Ingredients

- 2 pounds lamb or beef, cut into chunks
- 4 cups beef or vegetable broth
- 4 large potatoes, peeled and diced
- 3 carrots, sliced
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the meat and brown on all sides.
- Add onions and garlic, cook until softened.
- Pour in the broth and add potatoes, carrots, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Meanwhile, boil potatoes for mashed potatoes until tender, then mash with butter and milk.
- Season mashed potatoes with salt and pepper to taste.
- Serve the stew hot with a side of mashed potatoes.

- Use leftover meat for a quicker stew.
- Adjust seasoning to your preference.
- Garnish with fresh parsley before serving.
