- 2 pounds of baby potatoes
- 4 tablespoons of olive oil
- 1 teaspoon of sea salt
- 1 teaspoon of black pepper
- 2 teaspoons of fresh rosemary, chopped
- 2 teaspoons of fresh thyme, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, mix the potatoes with olive oil, salt, pepper, rosemary, and thyme.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 30-35 minutes, turning halfway through.
- Remove from the oven when golden brown and crispy.
- Serve warm.
