A delightful selection of Irish party food for gatherings.
Ingredients
- Potatoes – 2 lbs
- Cheddar cheese – 1 cup, grated
- Butter – 4 tbsp
- Green onions – 1/2 cup, chopped
- Irish sausage – 1 lb
- Brown bread – 1 loaf
- Guinness – 1 cup
- Beef – 1 lb, diced
- Carrots – 2, diced
- Onions – 1, chopped
- Spices – to taste
Instructions
- Preheat the oven to 375°F.
- Boil the potatoes until soft, then mash with butter and cheese.
- In a skillet, cook the sausage until browned.
- Add onions and carrots, cook until soft.
- Stir in Guinness and beef, simmer for 30 minutes.
- Fill a baking dish with the beef mixture, top with mashed potatoes.
- Bake for 25 minutes until golden.
- Serve with slices of brown bread.
Notes
- Feel free to add other vegetables.
- Adjust seasoning to your preference.
- This dish can be made ahead and reheated.
