Description
Irish colcannon potatoes are a traditional dish made with mashed potatoes and greens.
Ingredients
Scale
- 2 pounds potatoes
- 1 cup chopped kale or cabbage
- 1/2 cup milk
- 1/4 cup butter
- Salt to taste
- Pepper to taste
Instructions
- Peel and chop the potatoes.
- Boil the potatoes in salted water until tender.
- In a separate pot, cook the chopped kale or cabbage until soft.
- Drain the potatoes and mash them.
- Add the cooked greens, milk, and butter to the mashed potatoes.
- Season with salt and pepper.
- Mix until well combined.
- Serve warm.

- Colcannon can be made with different greens.
- Try adding green onions for extra flavor.
- Serve with sausages or Beef Bacon for a complete meal.
