- 2 boneless, skinless chicken breasts
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 1 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Cut chicken breasts in half horizontally to make thin cutlets.
- In a bowl, mix breadcrumbs, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Beat the egg in a separate bowl.
- Dip each chicken cutlet in egg, then coat with breadcrumb mixture.
- Heat olive oil in a skillet over medium heat. Cook chicken for 2 minutes per side until golden.
- Place chicken on a baking sheet. Top each with marinara sauce and mozzarella cheese.
- Bake for 10 minutes until cheese is melted and chicken is cooked through.
Notes
- Use panko breadcrumbs for extra crispiness.
- Serve with pasta or a green salad.
- Leftovers can be stored in the fridge for up to 3 days.
