Instructions
- Bake the cookies according to your recipe and let them cool completely on a wire rack.
- Once cooled, take one cookie and spread a generous amount of softened ice cream on the flat side.
- Top with another cookie, flat side down, to create a sandwich.
- Roll the edges of the ice cream sandwich in chocolate chips or sprinkles if desired.
- Place the sandwiches on a baking sheet and freeze for at least 1 hour to firm up.
