A delicious Hawaiian grilled chicken marinated in a sweet and savory sauce, perfect for outdoor barbecues.

- 4 chicken thighs, bone-in and skin-on
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup pineapple juice
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Chopped green onions and sesame seeds for garnish
Instructions
- In a bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, garlic, ginger, black pepper, and red pepper flakes.
- Place the chicken thighs in a resealable bag or a shallow dish and pour the marinade over the chicken. Seal or cover and refrigerate for at least 2 hours, or overnight for best flavor.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and reserve the marinade for basting.
- Grill the chicken thighs skin-side down for about 6-7 minutes. Flip and grill for another 6-7 minutes, basting with the reserved marinade until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove from the grill and let rest for a few minutes. Garnish with chopped green onions and sesame seeds before serving.
Notes
- For a deeper flavor, marinate the chicken overnight.
- You can use chicken breasts instead of thighs, but adjust the cooking time as they may cook faster.
- Serve with rice and a side of grilled vegetables for a complete meal.
