- 1/4 cup olive oil
- Juice of 2 lemons
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cherry tomatoes, halved
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 red onion, cut into wedges
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic powder, oregano, thyme, salt, and pepper.
- Add chicken breasts to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- While the grill is heating, toss the cherry tomatoes, zucchini, bell pepper, and red onion with a drizzle of olive oil, salt, and pepper.
- Grill the marinated chicken for 6-7 minutes per side, until cooked through and internal temperature reaches 165°F (75°C).
- During the last 5 minutes of grilling, add the vegetables to the grill. Cook until they are tender and slightly charred.
