Description

A flavorful and easy-to-make dish featuring honey sriracha-glazed salmon served over rice with fresh vegetables.


Ingredients

  • 2 salmon fillets (6 oz each)
  • 2 tbsp honey
  • 1 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 cup cooked rice
  • 1 cup shredded cabbage
  • 1/2 avocado, sliced
  • 1/4 cup shredded carrots
  • 1 tbsp chopped cilantro
  • 1 tsp sesame seeds

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix honey, sriracha, soy sauce, and lime juice in a small bowl.
  3. Place salmon fillets on the baking sheet and brush with half of the glaze.
  4. Bake salmon for 12-15 minutes, until cooked through.
  5. Brush remaining glaze over the salmon after baking.
  6. Divide rice between two bowls and top with shredded cabbage, avocado, and carrots.
  7. Place salmon on top and garnish with cilantro and sesame seeds.

Notes

  • Adjust sriracha for more or less heat.
  • Use quinoa or cauliflower rice for a lower-carb option.
  • Store leftovers in an airtight container for up to 2 days.
