Ingredients

  • 1 lb boneless, skinless chicken breast, sliced thin
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup water

Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add chicken and cook until no longer pink, about 5-6 minutes. Remove from pan.
  3. In the same pan, add garlic and veggies. Stir-fry for 3-4 minutes until tender-crisp.
  4. In a small bowl, mix soy sauce, honey, rice vinegar, cornstarch, and water.
  5. Return chicken to the pan, pour sauce over, and stir well.
  6. Cook for 2-3 minutes until sauce thickens.
  7. Serve hot over rice or noodles.
