A quick and flavorful honey garlic chicken stir-fry with mixed veggies. Perfect for a weeknight dinner.
Ingredients

- 1 lb boneless, skinless chicken breast, sliced thin
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp cornstarch
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup water
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Add chicken and cook until no longer pink, about 5-6 minutes. Remove from pan.
- In the same pan, add garlic and veggies. Stir-fry for 3-4 minutes until tender-crisp.
- In a small bowl, mix soy sauce, honey, rice vinegar, cornstarch, and water.
- Return chicken to the pan, pour sauce over, and stir well.
- Cook for 2-3 minutes until sauce thickens.
- Serve hot over rice or noodles.
Notes
- Use any veggies you prefer.
- Adjust honey for desired sweetness.
- Add more red pepper flakes for extra heat.
