- 4 large russet potatoes
- Vegetable oil for frying
- Salt to taste

- Wash and peel the potatoes. Using a mandoline or sharp knife, slice the potatoes into thin, even rounds (about 1/16 inch thick).
- Soak the potato slices in a bowl of cold water for at least 30 minutes to remove excess starch. This helps to make the chips crispier.
- Drain the potato slices and pat them dry with paper towels to remove excess moisture.
- In a deep skillet or frying pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Carefully add a few potato slices to the hot oil, making sure not to overcrowd the pan. Fry the slices for about 2-3 minutes or until they turn golden brown and crispy.
- Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to absorb excess oil.
- While the chips are still hot, sprinkle with salt and any additional seasonings you desire.
- Repeat the frying process with the remaining potato slices.
- Allow the chips to cool completely before serving. Enjoy your homemade potato chips!
