Ingredients

- 2 cups granulated sugar
- 1/2 cup honey
- 1/4 cup water
- 2 egg whites
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup chopped nuts (almonds or pistachios)
- 1/2 cup dried fruit (optional)
Instructions
- Line a baking pan with parchment paper.
- In a saucepan, combine sugar, honey, and water. Heat over medium until sugar dissolves.
- Bring to a boil and cook until mixture reaches 300°F on a candy thermometer.
- In a separate bowl, beat egg whites and salt until stiff peaks form.
- Slowly pour the hot syrup into the egg whites while mixing.
- Add vanilla extract and continue mixing until thick.
- Fold in nuts and dried fruit.
- Spread mixture into the prepared pan and let cool.
- Cut into bars once fully set.
